Every Classic loaf starts with whole grains milled fresh before they go into the dough. A live brown rice sourdough starter that has been maintained for years leavens and ferments the dough overnight, breaking down the grain the way long fermentation is supposed to. The result is a loaf with real flavor, an open crumb, and a crust that behaves like bread is supposed to behave. No gums, no stabilizers, no flour blends, no shortcuts.
Gluten-free does not have to mean a compromise. This is what it looks like when it is done right.
