Is All Sourdough Gluten-Free? What Fermentation Actually Does (and Doesn't)

I get some version of the same questions almost every market day. Isn't all sourdough gluten-free? Doesn't the fermentation break the gluten down? From the other direction, usually from someone already careful about this: how do you actually get the gluten out of yours? And a third one that comes up just as often once someone reads our ingredient list closely: if oats are naturally gluten-free, why do you have to say gluten-free oats at all?

All three questions come from careful, smart people, and all three deserve real answers instead of the confident, contradictory stuff that shows up when you search this online. Here's what I actually know, what I believe but can't prove, and I'll tell you plainly which is which as we go.

Does fermentation remove the gluten from wheat sourdough?

Mostly no, and the research on this is fairly settled. The FDA's threshold for a food to be labeled gluten-free is under 20 parts per million, the lowest level current testing can reliably measure. The one study that managed it needed sixty days of fermentation with a specific, lab-selected bacterial strain, not a process any working bakery runs before market day. (Sourdough Fermentation and Gluten Reduction, MDPI) If you have celiac disease, wheat sourdough is still wheat, however long it fermented, and it can still cause the same intestinal damage even on days it doesn't feel like it.

If it's not the gluten, why do so many people feel better eating sourdough?

Because fermentation is doing something real, just not the thing people assume. Wheat contains fructans, a fermentable carbohydrate in the FODMAP family, short for fermentable oligosaccharides, disaccharides, monosaccharides, and polyols. Fructans and gluten are different things entirely, a carbohydrate and a protein, and they just happen to live in the same grain. Several controlled studies point at fructans, not gluten, as the likely trigger behind a lot of the gut discomfort people file under gluten sensitivity when they don't actually have celiac disease. A slow, traditional sourdough fermentation measurably reduces fructans, in some studies by sixty to seventy-five percent compared to bread made with a quick commercial yeast rise. (Applicability of Yeast Fermentation to Reduce Fructans, NIH) That's a real, measurable effect, on the carbohydrate, not the protein. A lot of people who say sourdough doesn't bother them the way regular bread does are probably right. They're describing a fructan response, not a gluten one. Two different molecules, two different reasons someone might feel one way about one loaf and another about the next, and almost nobody explains the difference because it takes a paragraph like this one to do it.

So what makes our bread actually gluten-free?

Ours never starts with wheat, so there's no gluten to ferment out to begin with. The starter is organic brown rice flour and water, kept alive and fed on a regular schedule for years now. The Classic is built from organic sorghum, oat, and tapioca flours, organic millet, organic psyllium husk, and organic flaxseed, milled and mixed fresh, fermented overnight the slow way sourdough has always worked, just never with wheat in the recipe.

That happens to answer the FODMAP question too, though I did not arrive at the connection by researching it cold. A nutritionist who specializes in FODMAPs started buying our bread for her own clients years ago, before I fully understood why our formula fit what she was looking for. I actually looked into pursuing a formal low-FODMAP certification at one point, since a specialist in the field had already told me with her own clients what the ingredients suggested on paper. I never followed through, mostly because of the cost of the certification process itself rather than any doubt about the bread. I want to be honest about where the claim stands without it: this is a reasoned conclusion based on the ingredients and a specialist's professional interest, not a lab-certified FODMAP result on our specific bread, and it doesn't apply evenly across everything we make. Why organic, specifically

Every flour in that list is organic, and I want to tell you why in my own words rather than hide behind a citation, because part of this is something I believe rather than something I can hand you a study to prove.

Here's the fact first. Organic certification prohibits synthetic pesticide use, glyphosate included. Glyphosate is best known as a weed killer sprayed on a growing crop, but a meaningful share of glyphosate exposure in wheat and oats comes from something else: pre-harvest desiccation, spraying the herbicide directly onto the mature crop days before harvest to dry it down evenly and speed up the combine. It's real and documented, more common in cold, wet growing regions like Canada and the UK than in places like Kansas, where wheat growers have said the practice simply isn't necessary for their climate. Here's where the fact ends and my own reasoning starts, and I want the line between them to be clear. Glyphosate works by blocking an enzyme in what's called the shikimate pathway. Human cells don't have that pathway. A large share of the bacteria living in your gut do. That's not a fringe claim, it's basic biology, and it's the reason researchers are actively studying whether glyphosate exposure shifts gut bacteria toward strains that tolerate it and away from the ones that don't. That research is real and ongoing. It has not produced a finished, agreed-upon answer, and I won't tell you it has. Regulators are split on what any of this means for long-term health. The World Health Organization's cancer research arm called glyphosate probably carcinogenic in 2015. The EPA and most other national regulators reviewed a larger dataset and concluded it's unlikely to pose a cancer risk at the levels people actually encounter through food. What has moved well past dispute is what your gut bacteria are actually connected to. Digestion, yes, but also immune function, inflammation, and increasingly mood through what researchers call the gut-brain axis. That connection is one of the more solid shifts in medicine over the last twenty years.

Put a chemical that plausibly disrupts gut bacteria next to a body of gut bacteria that plausibly touches almost everything else about your health, and I don't need a finished study to tell me which way to bet. I'd rather act on a strong, honest hunch grounded in real biology than wait a decade for proof while feeding my family the thing I already suspect is a problem. That's not me telling you it's proven. That's me telling you why I already decided, and why I'm not waiting for permission to.

Organic certification means no synthetic pesticide touched the grain, glyphosate included. That's the fact. Everything above it is what I believe, and I've told you which parts those are.

Isn't gluten-free oats redundant?

This is a fair question and the answer is no, though the reason takes a minute to explain properly.

Oats are naturally gluten-free as a plant. The gluten proteins that cause trouble for celiac disease simply aren't part of what an oat is. The problem lives entirely in the supply chain, not the grain. Oats are commonly grown in rotation with wheat, barley, and rye on the same fields, harvested with the same combines, hauled in the same trucks, stored in the same grain elevators, and milled on the same equipment. At every one of those points, a genuinely gluten-free grain picks up gluten it never had on the stalk. (Gluten Free Watchdog)

There are two real standards that address this, and they're not the same thing. Certified gluten-free oats are grown conventionally and then mechanically or optically sorted after harvest to pull out any wheat, barley, or rye kernels that got mixed in, then tested under the FDA's 20 parts per million threshold. That covers most people safely. Purity protocol oats go further: dedicated seed, dedicated fields that haven't grown a gluten grain in years, dedicated harvesting and milling equipment from the field to the finished bag, so there's nothing to sort out because nothing gluten-containing ever touched the oats in the first place. So gluten-free oats isn't a redundant label sitting on top of a naturally clean grain. It's a description of an entire supply chain built to protect something the plant already had before anyone else touched it.

I don't have a tidy line that ties fermentation and glyphosate and oats into one closing thought, and I'd rather leave you with the real answers than force one. What I can tell you is that we chose organic, whole, freshly milled ingredients before I fully understood every reason behind that choice, and the more I read into any of this, the more reasons I find that it was right, even the ones I can't fully prove yet.

None of this is medical advice, and I'd rather say that plainly than let a hopeful sentence do the talking for me. Some of what's above is established science with citations behind it.
